Arched glazed weights fit into the circumference of the crocks body to keep fermenting foods fully submerged to prevent any spoilage from happening.

The Cornucopioides Fermentation Crock. Standing well over one foot tall, this beauty can easily hold one large cabbage in its interior.

A shallow moat is designed to be filled with water. This allows CO2 gases that build up in the crock as the fermentation process continues, to escape, while not allowing any air to come in. This prevents aerobic organisms like yeasts and mold from entering and developing on the surface.

The horned lid is inspired by the fungi trompette de la mort, a delicious mushroom (and indeed not deadly like its name might suggest) whose black trumpet-like bodies pop from the earth during the August- October months. The top trumpet also makes a nice salt dish as you prepare your fermentation recipe.
